Where do your oysters come from?

We source our oysters from trusted, small-scale farms across Florida’s Gulf Coast. Every batch is hand-selected for quality, freshness, and flavor. We harvest weekly on Thursdays, and have oysters ready for you to enjoy on Friday. We guarantee there is nowhere in our area to get a fresher oyster. 

Currently, we partner with Indian River Oyster Company (IROC) a small family farm exclusively growing in New Smyrna Beach in the Indian River Lagoon. IROCs are perfection – briny with a buttery finish, clean and deeply cupped, and very high salinity, a true Atlantic Ocean punch.

Absolutely. At Lost Coast Oysters, we follow strict year-round harvesting and handling protocols to ensure our oysters are always kept at a cool temperature and safe to eat — even during Florida’s hottest months. Thanks to modern aquaculture practices, advanced refrigeration, and rigorous testing, the old myth of only eating oysters in months with an “R” no longer applies.

We harvest to order, use cold chain logistics, and comply with all state and federal safety regulations — so you can enjoy our oysters fresh, flavorful, and safe any time of year.

With the love, care, and hands-on approach farmers take, we consider our oysters to be our babies. While wild oysters grow naturally on the sea floor, our oysters are farm-raised on the top of the water column (where all the good food is) in carefully managed estuarine waters using sustainable aquaculture methods. This allows us to produce oysters with consistent size, shape, and flavor — all while protecting wild oyster populations and enhancing water quality.

Our oysters are carefully tumbled and grown in floating cages, which helps create a deep cup, a cleaner shell, and a beautifully briny, balanced taste. The result? A premium, traceable oyster that reflects the best of Florida’s waters — minus the unpredictability of wild harvests.

Yes! We are both AQ certificate-holding farmers and licensed shellfish processors. We offer oysters by the 25/50/100 count bags for local pickup in West St. Pete. You can also pre-order for parties and special events.

Not at this time. We focus on local distribution to ensure freshness and quality. If you’re in the Tampa Bay area or surrounding regions, we’ve got you covered.

Nope—we’ll bring everything you need. For Shuck & Serve kits, you’ll get oysters, sauces, garnishes, and serving instructions. For Rawsome Raw Bar events, we provide the whole shebang: team, tools, setup, and cleanup.

Yes! We only work with farmers who use responsible, off-bottom aquaculture practices. Farmed oysters are one of the most sustainable seafoods on the planet—they help clean the water and restore coastal ecosystems.
