We promised to bring you some of the best sustainably raised Florida oysters while our LoCos are not being harvested, and first up are the Skipper Sweets from @serenoa_shellfish - hand raised by a lovely small family farm in Panacea, Fl. These babies are petite and sweet, and pack an amazing flavor into one bite.

In light of the Piney Point phosphogypsum plant sp In light of the Piney Point phosphogypsum plant spill and discharge, we want to share an update on our business. If you haven’t seen it on the news, the abandoned phosphate plant at Piney Point has discharged millions of gallons of water to Tampa Bay. Manatee County has forced evacuations and the government has declared a state of emergency. Water sampling and testing of our oysters is forthcoming but has not been completed yet. We have been working closely with multiple state agencies to assist with the coordination and development of a sampling plan that will paint a better picture of what is happening in the Bay. In the interest of being fully transparent and cautious, we will not be harvesting until further notice.

We are completely saddened by this lack of planning and blatant disregard for the environment, and feel that responsible parties need to be held accountable in a large way. This site’s owners filed bankruptcy in 2001 and it has been an issue since that very day. This is now the third discharge from Piney Point to Tampa Bay that has occurred while under taxpayer funded management. This will continue to happen to the remaining 20+ gyp stacks in the state if nothing is done to hold these companies accountable. We need to do better for our planet. 

We are so incredibly thankful for the immense support this community has shown us from the beginning. From taking years to get approved for our lease, to becoming the first to grow off-bottom oysters in the history of the Tampa Bay, to hearing people say that our LoCos are the best oysters they’ve ever tasted, and having them showcased at Bern’s Steakhouse. We truly never expected this much love and success around our farm. We’ve put our hearts and souls into this ‘side business’ of ours, and are so proud of how it’s grown and know we can go much further to put Tampa Bay on the map for sustainable aquaculture. To have our thriving and environmentally impactful business put on hold due to gross negligence out of our control is heartbreaking and maddening. Not just for us, but for our fellow shellfish farmers, and all life in and around the spill.

Our LoCos are hand raised in the pristine waters of the Terra Ceia Aquatic Preserve, and we think Stonecold Boards nailed that vibe with these gorgeous ring dishes! They go up for sale on SCB’s Instagram on 3.28 —-> jot that down! 

🦪 All of the (other) shells that we are left with after a good shucking session are saved and recycled back into the Bay! In rehoming them back on our farm, we hope to promote suitable habitat for a wild oyster set to call their future home.

Witnessing those ‘oyster virgins’ slurp their very first oyster, and seeing the reactions of bivalve veterans experience a Lost Coast ‘LoCo’ for the first time was priceless! You may have heard recently that oyster harvesting You may have heard recently that oyster harvesting in Apalachicola Bay is shut down for the next 5 years due to dwindling oyster populations. Our farm was founded in response to the collapse of the wild oyster fishery, and is part of the solution to a more sustainable way to enjoy oysters. Our farm stocks oyster seed raised in a hatchery; we never take from the wild. By supporting aquaculture farms (and there are MANY right here in Florida) you do your part to relieve pressure on the wild populations, and give them the chance to build back up.

Farming has a steep learning curve and trust me, we produce plenty of gnarly, barnacled, funky shaped oysters, but seeing one like this makes me think we are getting closer to figuring this thing out. 2021 is going to be 🔥🔥🔥

One of the coolest parts of farming is observing all of the marine life that lives in harmony with our floating oyster reefs! Fish, crabs, worms, amphipods, and many more thrive in the habitat. As they say, "if you build it, they will come!"
